13 Quick and Easy Weeknight Dinner Ideas

At the beginning of the year, I posted about the three-year anniversary of this blog and was excited to get back so many great ideas, constructive criticism and helpful suggestions from readers. (And if you have any feedback on this blog, let me know, I’d love to hear from you!) One of the requests I received on that post was for quick and easy weeknight dinner recipes to be gathered in one place, so I created this roundup of my go-to recipes for Monday through Friday. Most of these recipes take about 30-45 minutes or can be easily prepped the night before or in the morning for a delicious and quick dinner (and leftovers for lunch!)
