Spicy Pumpkin Soup from The Great Vegan Pumpkin eBook

If you are undoubtedly wondering what kind of gorgeous-looking soup that is in the photo to the left, it’s Pumpkin Sriracha Soup, one of 20 completely original and amazing recipes that can be found in The Great Vegan Pumpkinβ€”a new eBook written by Jackie Sobon of Vegan Yack Attack!

In case you are not familiar with Jackie’s website, here’s a summary: it’s packed full of gorgeous photos, contains original, accessible and easy recipes and is rounded out by her warm but occasionally sassy writing style. I met Jackie at Vida Vegan Con last May, and I absolutely adore her as a fellow blogger and love her hysterical and fun personality.

All of this and more is carried over into Jackie’s eBook, which includes an excellent balance of savory (Pumpkin Chili Empanadas), sweet (Biscoff Cream Cheese-Frosted Spiced Cupcakes), boozy (Double Pumpkin Beer Float) and everything in between.

Because I loved this soup so much and can’t wait to make more from her eBook, I am thrilled to be hosting a giveaway of two copies of Jackie’s new eBook!

    I love the Thai dish P.E.T. (Pumpkin, Eggplant, Tofu). Served over brown rice with a healthy dose of Sriracha sauce, it is my favorite meal of all time!
