Crispy Hasselback potatoes have a visually stunning appearance and amazing taste. Originating in Sweden, these sliced and roasted potatoes have become a fast favorite of mine due to their crispy exterior and tender interior. They make a perfect side for dinners with friends and family.

What are Hasselback Potatoes?

Hasselback potatoes are a traditional Swedish delicacy that first emerged in the 1940s at the Hasselbacken restaurant in Stockholm. These potatoes are sliced thinly but not all the way through, creating a fan-like appearance when roasted. The key to their crispy perfection lies in the slices that allow the edges to crisp up while maintaining a tender center.

To make vegan Hasselback potatoes, the dish retains its classic preparation, but instead of using traditional butter or oil, vegan alternatives are utilized, making it a great option for those following a plant-based lifestyle.

Why Hasselback Potatoes are So Delicious

The allure of Hasselback potatoes lies in their simplicity and remarkable taste. As they roast in the oven, the edges of each slice turn golden and crispy, creating a satisfying, savory crunch. The addition of rosemary, garlic, salt, and pepper infused into the potatoes, fills your kitchen with a heavenly aroma.

Hasselback potatoes allow for so much versatility. Add whatever spices and herbs you’d like depending on the meal you’re serving or the occasion you’re celebrating. Hasselback potatoes stand in as a solid side dish, a mouthwatering main course, or even a creative appetizer. Once you get the hang of how to slice them, the sky’s the limit with what you can use as seasonings.

Before we dive deeper into Hasselback prep, I have a new cookbook release to share with you by my friend and fellow blogger, Amber St. Peter!

How to Prep Hasselback Potatoes

The Hasselback potato preparation process is straightforward and requires minimal effort. To slice your potatoes, first place one chopstick on each side of a potato, lengthwise. The chopsticks will act as a guide to prevent you from cutting all the way through the potato.

Using a sharp knife, carefully make thin slices down the potato. This will create little ridges for the olive oil, vegan butter, herbs, and spices to sink into the potato while baking. It’s so magical and very simple!

These crispy Hasselback potatoes are so delicious and easy to make! I am a total potato head. I grew up in Maine, where we had some form of potato at least two meals a day. I love ’em! This recipe is a great dinner idea that looks much fancier and more impressive than the amount of work required to make it. Just a few ingredients and you’re on your way to a delicious date night dinner or meatless Monday meal!

Ingredients

  • 2 large russet potatoes (about 1 lb [450 g] each)
  • ¼ cup (60 ml) olive oil
  • Salt and pepper, to taste
  • 4 to 6 cloves garlic, minced
  • 3 or 4 sprigs fresh rosemary, stems discarded, finely chopped, plus more for garnish

Instructions

  1. Preheat the oven to 425ºF (218ºC).
  2. Thinly slice the potatoes three-fourths of the way through for the entire length of the potato.
  3. Lay the potatoes in a cast-iron pan or on a lined baking sheet and brush all over with the olive oil. Sprinkle with salt and pepper and bake for 30 minutes.
  4. Remove the potatoes from the oven, brush them generously with more olive oil and bake for 30 to 35 more minutes.
  5. Remove the potatoes one last time from the oven and carefully sprinkle the garlic and rosemary all over, making sure to push most of it into the crevices of each slice. Bake for 10 to 15 more minutes, then serve immediately!
