Today I’m super excited to be reviewing Vegan Bowl Attack! written by my friend and fellow blogger Jackie Sobon of Vegan Yack Attack. Besides being a fantastic food blogger, Jackie is also a professional photographer, and has shot several cookbooks for prominent and well-known authors in the vegan community. With this cookbook, this “Jackie of all trades” really did do it all: recipe development, writing, food styling and photography. Go Jackie!
What Jackie achieved with her efforts on this one is a gorgeous cookbook with more than 100 unique+delicious recipes that are packed with her beautiful food photos. VBA, of course, features recipes designed to be served in a bowl … and who wouldn’t love the simplicity of that? Despite this simple approach, Jackie has also developed really bold, complex flavors in each one of her recipes, which are all easy to make, utilizing many ingredients that are already found in most vegan pantries.
We loved making this spicy sushi bowl that’s packed with crisp daikon and cucumber, sweet mango, rich edamame and avocado over fluffy sushi rice that’s then topped with a creamy+spicy homemade vegan mayo, and finished with a little toasted panko and sesame seeds for some crunch. Prep was a breeze, cleanup a snap and the flavors all worked so well together to create a dish we’ll be making again and again. SPICY SUSHI BOWL
- Yield: 4 servings
Description
Recipe below reprinted from Vegan Bowl Attack!: More than 100 One-Dish Meals Packed with Plant-Based Power By Jackie Sobon, published with permission by Fair Winds Press.
Fluffy sushi rice, topped with fresh veggies, sweet mango, creamy avocado, and a homemade spicy sesame mayo make up this easy-to prepare sushi bowl. The edamame shines like little green gems and brings the protein, while the panko crumbs give it some crunch.
Ingredients
For the spicy mayonnaise:
- 1 package (12 ounces, or 340 g) soft silken tofu
- ¼ cup (60 ml) rice vinegar
- ¼ cup (60 ml) toasted sesame oil
- 3 tablespoons (45 ml) sriracha hot sauce
- ¾ teaspoon salt
- ¼ teaspoon garlic powder
- ½ teaspoon agave nectar
For the sushi bowl:
- 1 cup (180 g) sushi rice
- 2 cups (475 ml) water
- 1 tablespoon (15 ml) rice vinegar
- 2 sheets of nori seaweed cut into strips
- 4 ounces (115 g) cucumber, julienne-cut
- 6 ounces (170 g) daikon radish, julienne-cut
- 6 ounces (170 g) mango, peeled, seeded, and thinly sliced
- 1 cup (146 g) sliced avocado
- 1 cup (150 g) edamame, steamed and removed from pods
- 3 tablespoons (10 g) panko bread crumbs (gluten-free, if necessary), toasted
- 1 tablespoon (8 g) sesame seeds, toasted
Instructions
To make the spicy mayonnaise:
Place all of the ingredients in a food processor or blender and purée until completely smooth. Transfer the mayo to a jar or large squeeze bottle and store in the refrigerator for up to 3 weeks. (This recipe makes more than you will need for the sushi bowls.)
To make the sushi bowl:
Place the sushi rice, water, and rice vinegar in a pot over medium-low heat, partially cover, and bring to a boil. Lower the heat and simmer for 20 to 25 minutes until the rice is soft, but not mushy. Fluff with a wooden spoon. Divide the nori strips among 4 bowls, crisscrossing them. Divide the cooked rice among the bowls, as well as the cucumber, daikon radish, mango, avocado, and edamame. Combine the panko bread crumbs and sesame seeds in a small bowl and then sprinkle the crunchies over each bowl. Finish each bowl with a drizzle of spicy mayo. Serve immediately.

Wow, all the commenters have great ideas! I just had a brown rice salad for lunch that is like a Buddha Roll without the roll. Roasted peanuts, pickled ginger, scallions, cucumber, avocado and an Asian dressing. Love anything with quinoa, brown rice, sushi rice, wild rice, especially when it has a bit of crunch, a bit of sweetness and the earthiness of grains. Thanks!
The Roasty soba bowl from Isa Does It is one of my favourite bowl recipes, and I use the miso tahini dressing from it regularly.
But, I also LOVE soups of all kinds and I’m really excited for soup season. And casseroles. Mmmmm.
I looove leftover bowls! Some rice at the bottom and whatever leftover veggies are hiding in the fridge. Topped with a little saaauuuce mmmm!
My favorite one bowl meal is a dragon bowl over brown rice with grilled eggplants, steamed broccoli and grilled tomatoes topped with miso gravy.

My fav one-bowl meal consists of brown rice, red lentil dal, fried tofu, and veggies served with plenty of sriracha!
I love quick, “clean out the fridge” bowls. As long as I have a base of quinoa or rice, anything goes!
My favorite one bowl dish is from Heidi Swanson’s book Super Natural Every Day. It’s roasted Delicata squash, new potatoes, crispy tofu, kale, & pumpkin seeds in a curry sauce!! It’s a staple around my house.
I love burrito style bowls.
My favorite is just black beans, rice and topped with lots of avocado, hot sauce and salsa Lizano!
We keep it simple around here — Brown rice with skillet sweet potatoes, steamed broccoli & red cabbage, topped with a scoop of Jerusalem hummus and a few splashes of rice wine vinegar and Bragg’s aminos!
Soups are my favorite one-bowl meal and include all sorts of grains and vegetables. My favorite is miso soup with variations made with whatever I have on hand.

My favourite vegan bowl so far is the Buddha Bowl from I Eat Trees. Quinoa, pinto beans, veggie sausage, kale, red peppers, onion, carrots and this yummy soy sauce, nutritional yeast, and vinegar sauce… so good!
I love rice topped with black beans, corn, avocado, and salsa with a few corn chips broken over the top. Kind of like a taco, but easier to eat.
I love bibimbap!
Any bowl from Angela Liddon/ ‘Oh She Glows’, but the favorite is the savory oatmeal bowl: oatmeal & red lentil combo, hummus, avocado slices, cherry tomato halves, and salsa. Yum!
I love brown rice biwl with streamed veggies and a spicy sauce to tie it all together. Can’t wait to try the recipe!
My favorite one bowl meals are simple miso based vegetable and rice noodle soups. With the autumn season looming ahead, this cookbook would be perfect!

My favorite one bowl meal is red beans and rice.
Love to mix brown rice, tofu marinated in a szecheun sauce and a mix of veggies.
I make a yummy version of a California Barley Bowl with Lemon Mint Vegan Yogurt Dressing. It has barley, avocados, cumin, cardamom, and coriander-spiced sunflower seeds, cumin roasted brussels sprouts. Looking forward to this cookbook!
I like any bowl with avcado and a lot of veggies and a spicy sauce. I can’t wait to try this recipe above “Spicy sushi bowl”
I’ve never heard ‘Yack Attack’, I like it! I have a few favorites, but my current obsession is a one pot dish with quinoa instead of rice. If you want the exact measurements just get in touch. Put uncooked quinoa in a large skillet, top with corn, black beans, sliced tomatoes, vegan broth (I use Rapunzel), cover. Cook about 15 – 20 minutes medium heat. To serve top with avocado slices and a healthy squeeze of lime. I like it spicy, so instead of sliced or stewed tomatoes I use rotel.

I love brown basmati rice, seasoned beans, shredded red cabbage and carrots, cherry tomatoes, avocado, and any type of homemade vegan sauce.
I love a Yumm bowl – brown rice, beans, salsa, olives, vegan sour cream, avocado, diced tomatoes, and the Yumm sauce from Cafe yumm. I can eat these all week!
Great idea to ask for favorite bowl recipes. I’ve marked down some of these combinations for my weekly family meal plan, thank you! One of my easy go-to bowls contains quinoa, black beans, tomatoes, cilantro, avocado, green pepper, red onion, red wine vinegar, lime juice, olive oil and salt.

My favorite one-bowl meal is vegan lo mein with soba noodles.
I love what’s left in the refrigerator bowls. I almost always have brown rice and lentils, some sort of bean, greens, steamed veggies and if I don’t have a sauce left over, there’s hummus or some sort of slaw.
I also love breakfast bowls. Some cooked grain and fruit, fresh or re-hydrated dried fruits. Maybe coconut yogurt, maple syrup, cinnamon or just get creative. They’re bowls, you just go with what appeals to you!

I can’t decide between two of my favorite Veggie Bowls: Kimchi Quinoa Bowl or Cuba Quinoa Bowl! They both are very delicious and full of exotic flavors. Pretty much I love any international dishes made into bowl!

I love a good Dragon bowl. A warm grain on the bottom, a mix of warm and cold veggies, bands or baked tofu and a nice drizzle of Dragon sauce. Yum!
My favorite bowl= steamed sweet potatoes, sweet potato greens, red onions & baby lima beans sautéed in coconut oil & berbere. Over some kind of grain or quinoa.

My favorite bowl recipe is either a Sushi Bowl made with Vegan Tuna, or a Vegan Fajita Bowl! I make bowls every week for lunch, so this book makes me so happy!
My favorite one bowl is brown rice with a ton of pan brown broccoli, onions, and red peppers, and edamame topped with green onions, toasted sesame seeds and smothered in sriacha.
I love a “Fresh” bowl (vegan restaurants in Toronto who also have a recipe book) with peanut sauce and the best-ever tofu–seriously, I love it better the next day straight outta the fridge (recipe from their book, too!). YUM!

I find myself roasting veggies, usually carrots, broccoli, beets, and then placing them over steamed kale with a tahini/lemon/ginger/garlic dressing. It is delicious!
It sounds odd but this bowl was passed down from my great grandmother; hard boiled eggs, cooked noodles, splashed with soy sauce…sooooooo GOOD 🙂
lately my favorite one bowl meal is a noodle bowl — topped with roasted summer vegs and drizzled with a spicy salty-sweet miso-tahini sauce.
We love noodle bowls in our house. A simple broth poured over whatever veggies we’ve got in the fridge and rice noodles is an easy favorite.
I grew up eating bún/ vermicelli. So I love doing lemongrass tofu, pickled veggies, roasted peanuts, and a combo of greens like mint, basil, and shredded iceberg. Served with a vegan fish sauce or a combo maeploy/fish sauce to add some sweetness.
well, aside from piling random leftovers into a bowl – which i love! – i intentionally make stir-fried broccoli, bok choy, and spinach with peanut tofu. it’s a (simple) favorite in our house!
I make this Buddha bowl regularly: farro, sauteed greens, roasted sweet potatoes, glazed tempeh, tahini sauce. Chopped green onions for garnish. Mmmmm!

I’ve loved eating out of bowls for years before it was a thing, so anything in it I love, but I have been making ones with black bean rotini, tofu, greens, and homemade kimchi.
My favorite one-bowl meal is this Sushi Bowl from Cafe My House here in Ottawa (Canada). It is honestly the best! You can’t go wrong with sushi rice, edamame, nori strips, shredded carrots and sesame seeds with a sesame/ginger dressing. YUM.
Can I give two answers? I love soba noodles with a miso/tahini sauce, chickpeas, and roasted cauliflower from Isa Chandra Moskowitz. My absolute favorite bowl is brown rice with steamed or stir fried veggies, a huge service of Grit tofu cubes (amazing veggie restaurant in Athens, GA), and Grit gravy drowning the whole thing. I then liberally sprinkle shoyu roasted pumpkin and sunflower seeds on the top.
I love brown rice, chickpeas, and whatever veggies I have on hand, preferably steamed broccoli, topped with Julie Hasson’s Crack dressing.
My favorite bowl is zucchini, carrots, mushrooms, broccoli, and rice topped with lemon juice.
My favorite is a variation of a Five Color bowl (black, red, green, white, and yellow) based on the Japanese “Power of Five.” Tofu (white) marinated in soy sauce, rice vinegar, splash of sesame oil and a dash of red pepper, served over brown rice with (black) sesame seeds and (black) seaweed [nori, ochazuke wakame etc.), steamed spinach (green), grilled sweet potato (yellow), tsukemono (e.g. umeboshi- red) and some fresh fruit.
I like my bowls to include sweet potatoes, cauliflower, brussels, quinoa and turmeric tahini sauce.
My favorite bowl is a quinoa, seitan, broccoi, and mushroom gravy bowl!
We love Vegan Yack Attack in my house. The Chipotle White Bean Salad Sandwich is an absolute favorite!

My favorite one bowl meal is ramen! Fancy ramen or 25 cent ramen. I love it all!
My favorite one bowl meals are what I use to empty my fridge – I chop up all the veggies I’ve got hanging around and roast them with chickpeas, then top everything with plenty of pesto make from any herbs I need to use up.
I love any grain sautéed with onion and lentils. Any combination of vegetables- My favorites for this dish are steamed cauliflower, sweet potato and kale with a tehina dressing. I like a crunch too so I throw on seeds at the end.
My favorite bowl is pretty simple. Spanish rice, black beans, field green lettuce, spinach, lime, Pico de Gallo, and avocado. Eaten with tortilla chips…and a Margarita on the side ?I also love to sub the black beans for chickpeas and Spanish rice for brown rice. Yum!!

I like my bowl meals to have a base of a large salad of all sorts of greens, lettuces, fresh herbs, tomato, carrots, radishes , onions, and any sort of beans or cooked vegetables on top!
This cook book looks amazing! My favorite bowl has to be a coconut curry over brown rice or quinoa. With a side of vegan naan bread of course 🙂

To me, the Thai BBQ Beer Cabbage with Daikon Slaw is amazing. The amount of vegetables and the sauce are incredibly delicious. I am truly impressed with this women. Great job! Keep the recipes coming, thanks!
